Chicken Alabama

Because blogging every day is more difficult than one might think, here is a recipe to keep me going. This is one of our favorites. We ate it for dinner tonight and as usual, the kids loved it. Always a bonus!

CHICKEN ALABAMA
4 chicken breasts
1/3 cup flour
½ tsp paprika
½ tsp salt
Pepper
5 Tbl butter or margarine
¼ cups chopped onion
2 cup chicken soup stock*
1 cup light cream
¼ tsp lemon juice

Coat chicken with mixture of flour, paprika, salt, and pepper. Brown in 2 Tbl butter. Saute onion in 3 Tbl butter for 5 minutes. Stir in excess flour from coating chicken. Add soup stock. Cook and stir until thickened. Add cream and cook until smooth and thick. Add lemon juice; blend well. Pour sauce over chicken. Bake 1 ¼ hours at 325 or until chicken is tender. Serve over rice. I usually double the sauce

*Can use 2 bouillon cubes or 1 ½ tsp chicken soup base to 1 cup water
