Chocolate Chip Cookies!

Alright peeps, you asked for it, so here it is:

Chocolate Chip Cookies



1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 tsp vanilla
3 cups all-purpose flour
1 tsp baking soda
2 tsp hot water
1/2 tsp salt
2 cups chocolate chips
1 cup chopped walnuts (optional)

Preheat oven to 350. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs on at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased cookie sheets. Bake for 10 minutes.

Chef's notes:
  • I was trying to use all the tips and tricks I could come up with to make these good. I spooned the flour into the 1 cup measure and then leveled it off with a knife. I read somewhere that dipping the measuring cup into the flour and then leveling it off packed the flour tighter, making for too much flour and therefore, a dryer cookie.
  • I put in 1 cup chocolate chips and 1 cup m&ms- the kids thought that was fab.
  • Instead of walnuts, we dumped in a bunch of ground up almonds.
  • I baked the cookies on baking stones.
  • Enjoy! And remember that at least one person in the room should be in their undies for optimum cookie performance.

I miss out on blogging for a week and suddenly you are going to concerts, making cookies, and having a baby.....seriously. Um, but I am NOT a nut-cookie person. Nuts should be reserved for hiking and chipmunks, not cookies. Sorry.
